We love Chocolate Ice Cream but just can’t always fit it in with our four weekly flavors but we have it this week (probably for the last time in our 2011 season), so chocolate lovers rejoice. We’ve created a rich and creamy chocolate ice cream with organic Dagoba® chocolate. It is bold without being overstated so its depth and intricacies shine through the smooth creaminess.

Artik Creamery's Spanish Turrón Ice Cream is an exquisite combination of flavors: orange blossom ice cream sweetened with honey and with bit of candied orange zest, pistachios, and toasted almonds.

Spanish Turrón Ice Cream has layers of flavors that give it a great depth and subtle complexity. The taste of local honey combines with three different orange flavors: orange blossoms, fresh zest, and bits of our own candied orange zest. Chunks of green pistachio and freshly roasted almonds provide the classic texture of turrón, a Spanish nougat.

Strawberry Balsamic

You can't deny the enjoyment of Artik Creamery's Strawberry Balsamic Ice Cream in a fresh handmade cone!

Adding balsamic vinegar to ice cream isn’t exactly standard practice but a touch of cherry oak aged Italian balsamic vinegar in this very fruity Strawberry Balsamic Ice Cream brings out the sweet flavor of the berries in an amazing way. The balsamic is subtle yet adds depth and we back it with the smooth, tart flavor of our crème fraîche and buttermilk to carry the strawberry flavor even further. The organic strawberries are straight from Meadlowlark Family Farm in Ashland, Oregon.

Every week we also make a dairy-free flavor and this week we are bringing back our popular Thai Lime Coconut with Candied Ginger Non-Dairy Ice Cream. In its native tongue, Thai lime is called magrut. More commonly, it goes by the name kaffir lime and we grow our own for our ice cream. Using the leaves from the lime tree, we infuse the flavor into top-quality organic coconut milk and add organic creamed coconut to create a smooth and creamy non-dairy treat free of soy, additives, or fillers. We sweeten with organic agave syrup to provide an alternative to regular sugar and then add small bits of spicy candied ginger for an extra flavor.

Sweet Cream Blackberry Swirl Ice Cream

Artik Creamery's Sweet Cream Blackberry Swirl Ice Cream showcases the exceptional flavor of our organic cream and local wild blackberries.

What could be better than cream and berries on a hot summer day? How about Sweet Cream Blackberry Swirl Ice Cream? We let the amazing flavor of our exceptional organic cream shine in this simple but wonderful ice cream. A wild blackberry swirl twists through the ice cream, giving it a beautiful striped appearance and the great flavor of summer.

Our Madagascar Vanilla Ice Cream is made with organic Fair Trade vanilla from the African island of Madagascar. We use shiny, fresh vanilla beans for the a deep vanilla flavor and add in a smaller amount of vanilla extract to expand the flavor profile. Far from boring, this vanilla stands proud on its own

Super smooth and creamy with the taste of a warm day on a tropical beach, our  Coconut Ice Cream is great for an August day in the Rogue Valley.

Despite the cool, wet spring weather, local cherry season was pretty good this year. The cherries are all off the trees and now they are in our local Cherry Sorbet. We sweetened this sorbet with organic cane sugar and add a dash of Clear Creek Distillery’s kirschwasserfor a subtle cherry complexity. Come early if you want to take a pint home! We’ll be serving this special flavor by the scoop too.

Artik Creamery's Spearmint Black Currant Swirl Ice Cream

Artik Creamery's Spearmint Black Currant Swirl Ice Cream pairs our own garden fresh spearmint with the wonderfully tart and complex flavor of locally grown black currants from Pennington Farms.

Not many people are familiar with black currants. These wonderfully tart and complex berries are bursting with wine-like flavors, antioxidants, and vitamin C. It’s a challenge to find the right flavor that pairs with black currant and we’ve found the perfect match in our own garden fresh organic spearmint. Starting with a bright, fresh spearmint ice cream, we swirl in a ribbon of black currant to make Spearmint Black Currant Swirl Ice Cream.

Our Strawberry Rhubarb Ice Cream marries local, organically-grown red rhubarb from Talent and just-picked organic strawberries from Joshua Farms in Gold Hill. We start by making a beautiful pink rhubarb ice cream then we mix in strawberries to make a tangy sweet combo loaded with local fruit.

The Art & Science of Homemade Ice Cream Class – Additional Recipes

Candied Cherries

1 pound (450 g) fresh Bing cherries
1 ½ cups (375 mL) water
1 cup (200 g) sugar
1 tablespoon (15 mL) freshly squeezed Meyer lemon juice
1 tablespoon (15 mL) kirsch

Stem and pit cherries. Heat cherries in the water, sugar, and lemon juice in a large stainless steel saucepan until the liquid begins to boil. Turn down to a low boil and cook cherries for 25 minutes, stirring frequently during the last ten minutes as the liquid begins to thicken. Reduce to a syrup consistency and add the kirsch in the final minutes before removing from heat. Let cool.

Drain the cherries in a mesh strainer for one hour, saving the syrup for another use. Chop coarsely and chill thoroughly before mixing in to ice cream. May be kept refrigerated for ten days.

Chocolate Ice Cream

2 cups (500 mL) cream
3 tablespoons (20 g) unsweetened cocoa powder (do not use Dutch-process cocoa)
¼ cup (125 mL) water
5 ounces (145 g) 68-74% chocolate (drops or chopped bars)
1 cup (250 mL) milk
¾ cup (150 g) sugar
5 egg yolks
½ teaspoon vanilla extract
Pinch of sea salt

Makes about 1 quart (0.9 L) ice cream base.

Heat the water in a small saucepan until bubbles form. Add cocoa powder, whisk constantly for 30 seconds while cocoa powder comes to a simmer. Remove from heat.

Heat the milk in a larger saucepan to 120°F (49°C). Add the chocolate, whisking frequently until melted into milk. Add the sugar and salt and stir to dissolve completely. Remove from heat. Beat egg yolks in a small bowl until smooth and lightened in color. Add the vanilla to the egg yolks. Heat the cream to 155°F (68°C), then add about two tablespoons (30 mL) to the beaten egg yolks while stirring the yolks constantly. Now slowly add this egg and vanilla mixture back into the saucepan with the cream while stirring constantly to create a thin custard. Remove from heat and combine both mixtures. Strain into an airtight container and chill immediately to 34°F (1°C).

Once fully chilled, churn according to your ice cream maker’s instructions.

Honey Lavender

Long awaited since we last had it available in 2010, our Honey Lavender Ice Cream is back! We use fresh organic lavender from nearby Pacific Botanicals and sweeten this flavor with local Rogue Valley honey. The local summer fruits are here, but why not bring out another local farm flavor: Caramel Pumpkin Spice? We layer the flavors of caramel, pumpkin, and a trio of spices (cinnamon, nutmeg, and clove) to give this ice cream a nice complexity reminiscent of pumpkin pie. Our pumpkin is organically grown in Talent, a mile from our ice cream churn!

On the dairy-free side of the display freezer, we have another favorite: Strawberry Coconut. This coconut milk-based flavor brings together the refreshing, tropical flavor of coconut and local organic strawberries from Joshua Farms.
